Healthy, tasty, and high-quality food products

The quality, healthfulness, and safety of fish, game, and reindeer food products and factors affecting these features are studied in the program. The potential to develop products with increased human health benefits is a special focus.

The effects of production technologies on the quality of products

The goal of this sub-theme is to evaluate the effects of production technology on food product quality and to develop methods for improving quality. To do this, the impacts of the different components of the production chain on the final food product are studied.

Defining quality and quality changes in production chain

The goal of this sub-theme is to analyze the critical control points within the entire production process and characterize product quality and specific requirements at the various stages of the process.

Health and safety

The goals of this sub-theme are to identify and describe the human health benefits and food safety of fish and game products and to develop methods of improving benefits and safety.
