Use of Reindeer and Red deer by Catering Sector in 2005

The catering sector has an important role in Finnish food market. Every third Finn uses catering services daily. Game and reindeer meals are served occasionally. The use of imported red deer is more common than domestic reindeer meat in catering outlets. Meals prepared from reindeer are served in every third catering enterprises. Whereas red deer meals are served in almost half of the enterprises.

The catering sector used a total of 430,000 kg of reindeer meat. Nearly one half of the reindeer meat was used by restaurants and accommodation services. The most important factors influencing the decision to purchase reindeer were quality and reliability of delivery. The local origin of the raw ingredient or the prices of other game products were less significant. One third of reindeer meat was used in Lapland.

The catering sector used a total of 560,000 kg of red deer. Less than 10 % of that volume was used in Lapland. Red deer was used most commonly in staff restaurants, 70 % of them served red deed meals.

Proportions of use of reindeer meat by catering sector segment

The popularity of red deed meals in staff restaurants is based on better availability and inexpensive price. By serving red deer meals the staff restaurants may offer affordable variation in their meal assortments.

The data was collected by means of statistical sampling. The target population consisted of all catering sector actors which served meals outside households. A total of 2,263 kitchens were sampled. The response rate was close to 80 %.
