Fish and crayfish farming and restocking of fish and crayfish Around 10-15 million kilos of rainbow trout are produced annually for food in Finland. The amounts of other farmed species for consumption are less significant, yet the farming of European whitefish has strongly increased. Juvenile fish and crayfish of different ages are reared in large numbers for restocking and culturing.
Over one hundred million juvenile fish and crayfish are introduced into waterways every year in order to substitute or increase the natural reproduction rate. The most common species released into the water bodies is the whitefish, most of which are introduced as larvae.
